Level 2 Food and Beverage Management

Program Overview

This level would provide students with a more in-depth understanding of the menu planning and development, purchasing and inventory control, food and beverage service, marketing and sales, and technology aspects of food and beverage management in hotels.

Module 1: Menu Planning and Development

  • Understand the importance of menu planning and development.
  • Learn about the different factors that are considered when planning a menu, such as guest preferences, budget, and seasonality.
  • Develop skills in creating a balanced and appealing menu.
Module 2: Purchasing and Inventory Control

  • Understand the importance of purchasing and inventory control.
  • Learn about the different steps involved in purchasing food and beverage products, such as sourcing, ordering, and receiving.
  • Develop skills in managing inventory levels and preventing food waste.
Module 3: Food and Beverage Service

  • Understand the importance of food and beverage service.
  • Learn about the different aspects of food and beverage service, such as taking orders, presenting food, and clearing tables.
  • Develop skills in providing excellent food and beverage service.
Module 4: Food and Beverage Marketing and Sales

  • Understand the importance of food and beverage marketing and sales.
  • Learn about the different ways to promote food and beverage products, such as advertising, public relations, and social media.
  • Develop skills in marketing and selling food and beverage products.
Module 5: Food and Beverage Technology

  • Understand the importance of food and beverage technology.

This course is level 2. Candidates entering this program should have the following:
